Pithiver

This Classic Pastry is named after the town of Pithivers about 50 miles south from Paris, This puff pastry is filled with frangipane. The frangipane that I used consists of Almond cream, Pastry cream, Cake Flour and I also added 58% Chocolate disc and 1 zested orange skin.
